What you are thinking of is called Plus Sizing, and is a common practice. If you make certain to compensate for the increased rim size by choosing a lower profile tire there will be absolutely no change in performance or handling that should cause you concern.
This is not to say that you won't notice any difference when you drive. Lower profile tires do feel different but this is a matter of individual taste to a large degree.
Before investing a lot of money in a change, you might want to try driving a vehicle with the lower profile tires to see if you like it.
