I presently have dealer recommended summer 225/70/16 tires on my 2003 Hyundai Santa Fe 4 wheel drive and am considering replacing with winter tires 2225/60/16. Is this acceptable?

See our Tire size calculator. The winter tire which you are considering is nearly one inch shorter than your summer tire (I assume you made a typo and meant 225/60 not "2225" which would make the tire even wider than your car). The lower profile tire you mention would fit, but there are other tires which are a better match for your original tire size, and those are the ones which you'd be wise to stick to.
